This year, the garden club produced a plethora of gorgeous home-grown tomatoes. I couldn’t resist buying 20 pounds. What does one do with 20 lb of lovely tomatoes? Quarter and freeze for future ketchup, naturally. But what happens when the freezer is full? Ah! Tomato soup! My leftovers have been frozen in wide-mouth jars for a winter day.

Gluten-free, lactose-free, FODMAP friendly

Summer weather calls for the occasional spicy-hot treat. Here’s a tasty salsa without fresh onion or garlic. You’d probably call it “mild.” For “medium” or “hot,” have at it with the Tabasco. This salsa is made only with FODMAP friendly ingredients, but while a little spicy food might not set off your internal fireworks, too much can still be dangerous. Monitor your own tolerance!

Easy, Spicy Lemon-Ginger Dip

Gluten-free, lactose-free, FODMAP friendly

This is ridiculously easy (the only hard part is locating a jar of lemon-ginger spread or marmalade). I love it with halved white rice crackers. If you can have lactose, I bet it would be wonderful poured over a brick of cream cheese like hot-pepper jelly. Remember to check the ingredients on the lemon-ginger spread, and make sure it doesn’t contain forbidden sweeteners.
